How are you all doing? It is almost March, and we are moving into the 'National Nutrition Month.' In March, the Academy of Nutrition and Dietetics focuses attention on healthful eating. This year’s theme is, ‘Personalize your Plate,' which promotes creating nutritious meals to meet individuals' cultural and personal food preferences. The Academy encourages everyone to make informed food choices and develop sound eating and physical activity habits they can follow all year long.
We can’t change what is happening in the world during this pandemic. Of course, we can do our best to avoid the spread by living as is recommended by the scientists. We can also each do our part by working on our health improvements while many of us are spending more time at home. Be creative, think about areas that need improvement, and

❝Having had a "health scare" back in 2017, I decided that I needed to examine my nutritional needs to make sure I was eating the right mixture of foods. The first thing I did was consult Silke as she is very committed to nutrition. I even took a nutritional course with her to learn more about my body and how to be the fittest I can be.
Silke recommended I take the FIT Test to see the way my body reacted to certain foods. As I listen and learn from his expertise since at least 9 years at the annual conference of the Institute for Functional Medicine in NY, I have signed up for many of his lectures.
He starts out changing his patients' diets before he changes or adds medications.
His results are amazing!
‘We know that COVID-19 mostly affects those whose immune systems are both suppressed and inflamed at the same time. Inflammatory states are predominantly caused by our modern diet. While there are other causes of inflammation—toxins, allergens, infections, and stress—food plays the greatest role for most of us.
When you’re inflamed this creates a body ripe for an inflammatory response from COVID-19.
Unfortunately, only 12% of Americans are metabolically healthy, making most of us pre-inflamed. When the immune system is suppressed, you’re more likely to spread the virus, and you can’t respond to the vaccine the same way a healthy person would. Bottom line: this is bad news.
The only way to tackle this issue of rampant inflammation is to start with food.
Food is information. Food is medicine. Food is the most powerful regulator of the chemical signals in your body.
In fact, the most important part of food may not be calories, protein, fat, carbohydrates, fiber, vitamins, or minerals, but the tens of thousands of medicinal compounds embedded in plants and even animal foods that regulate, modulate, and influence nearly every single one of the 37 billion, billion chemical reactions that occur in our bodies every second.
I’ve seen individuals get off cholesterol medication, insulin, and blood pressure medication within weeks after changing their diet. They didn’t do it with some fancy detox or innovative therapy. They did it with real, whole food. They took out the processed, packaged, chemical and sugar-laden foods that populate many grocery stores and focused on nutrient-dense whole foods made by nature.’

After participating in a workshop held by the Institute for Functional Medicine about COVID-19 vaccines, it was clear that a healthy lifestyle improves the antibody response from the vaccine. Being less inflamed, eating an Anti-Inflammatory Diet, working out regularly, getting a good night's sleep, and avoiding alcohol all improve the protection we will receive once vaccinated.
As you all know, I talk so much about an anti-inflammatory nutrient-dense diet, about avoiding sugar and artificial sweeteners, eating plenty of vegetables and lean, healthy proteins, which during this pandemic shows evidence that it avoids very severe cases of illness. That alone is so worth it to me.
